“Eww, bone marrow.” Shut up. Eat it. It’s beef-flavored butter with garlic, salt, and pepper. Low carb, high fat (the good fat), and absolutely delicious. Scoop it, smear it, devour it. 🥖🧄🥩
1. Preheat oven to 450°F.
2. Pat the marrow bones dry with a paper towel. (Dry bones = better roast.)
3. Place them on a pizza pan or sheet pan. I used a pizza pan because, honestly, they won’t stick.
4. Season generously with salt and pepper.
5. Roast for 10 minutes, then pull the pan out. Top each circle with about ¼ teaspoon of chopped garlic. (If your garlic is frozen like mine, smash it down with a fork so it sticks. If it’s fresh, it’ll melt right in.)
6. Put the pan back in the oven and roast for another 10 minutes—20 minutes total.
7. Pull them out and eat immediately! Scoop onto toast, or eat straight from the bone.
8. Optional: hit it with a squeeze of lemon and sprinkle of parsley to cut the richness.
